Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp chipotle powder

1/2 tsp smoked paprika

1/2 tsp garlic powder

Juice of 1 lime

Salt and pepper to taste

For the Sweet Potatoes:

2 cups sweet potatoes, cubed

1 tbsp olive oil

1/2 tsp smoked paprika

Salt to taste

For the Black Beans:

1 can (15 oz) black beans, drained and rinsed

1/2 tsp cumin

Salt to taste

For the Cilantro Lime Sauce:

1/2 cup Greek yogurt or sour cream

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 garlic clove, minced

1 tbsp olive oil

Salt to taste

For Assembly:

2 cups cooked rice (white or brown)

Extra cilantro for garnish


Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, chipotle powder, smoked paprika, garlic powder, lime juice, salt, and pepper. Coat the chicken evenly and let it marinate for at least 30 minutes.
  2. Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, smoked paprika, and salt. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  3. Prepare the Black Beans: In a saucepan over low heat, warm the black beans with cumin and salt. Stir occasionally until heated through.
  4. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (75°C). Let rest before slicing.
  5. Make the Cilantro Lime Sauce: Blend Greek yogurt, cilantro, lime juice, minced garlic, olive oil, and salt until smooth. Adjust seasoning as needed.
  6. Assemble the Bowl: Start with a base of rice, add roasted sweet potatoes and black beans, then top with sliced chipotle chicken. Drizzle with cilantro lime sauce and garnish with fresh cilantro.
