Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 tablespoon instant espresso powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

3/4 cup powdered sugar

2 tablespoons brewed espresso (for glaze)

Instructions

1. Whisk together flour, cocoa powder, espresso powder, baking soda, and salt in a bowl.

2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.

3. Add egg and vanilla extract; beat until combined.

4. Gradually add dry ingredients and mix just until blended.

5. Cover and chill dough in the refrigerator for 30 minutes.

6. Preheat oven to 350°F (175°C). Roll dough into balls, flatten slightly, and imprint if desired.

7. Bake for 10–12 minutes until edges are set. Let cool slightly.

8. Whisk powdered sugar and brewed espresso into a glaze.

9. Spoon or brush glaze over warm cookies. Allow to set before storing.

Notes

Chilling the dough ensures thicker cookies and richer flavor.

Use a cookie stamp to add a decorative touch before baking.
