Ingredients

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder

1/2 cup buttermilk, room temperature
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup hot water (or hot coffee for deeper flavor)
For the raspberry frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
1/3 cup freeze-dried raspberries, ground into powder
1–2 tbsp heavy cream or milk
1 tsp vanilla extract
Fresh raspberries (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, sift flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk buttermilk, oil, sugar, eggs, and vanilla until smooth.
- Gradually mix in dry ingredients until combined.
- Add hot water or coffee and stir until the batter is smooth.
- Divide batter among liners, filling two-thirds full.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Let cool 5 minutes in pan, then transfer to a rack to cool completely.
- For the frosting, beat butter until creamy, then slowly add powdered sugar.
- Mix in raspberry powder, vanilla, and 1 tbsp cream. Add more cream if needed.
- Pipe frosting onto cooled cupcakes and top with fresh raspberries.
