Ingredients

1 cup fresh or freeze-dried raspberries

1/2 cup heavy cream

8 oz dark chocolate, chopped

2 tbsp unsalted butter

1/3 cup powdered sugar

1 tsp vanilla extract

6 oz dark chocolate for coating

2 oz white chocolate for drizzle (optional)


Instructions

1. Heat the heavy cream until just simmering, then pour over the 8 oz of chopped dark chocolate. Let sit for 2 minutes.

2. Stir until the chocolate is melted and smooth.

3. Add raspberry puree (or finely ground freeze-dried raspberries), powdered sugar, vanilla extract, and butter. Mix until combined.

4. Chill the ganache in the fridge until firm, about 1 hour.

5. Scoop into small balls and place them on a parchment-lined tray. Freeze for 30 minutes.

6. Melt the remaining dark chocolate and dip each ball to coat.

7. Place dipped truffles back on the tray and drizzle with melted white chocolate.

8. Let set at room temperature or chill until firm.

Notes

For extra flavor, try adding 1 tsp raspberry liqueur to the ganache.

Freeze-dried raspberries offer intense flavor and vivid color without added moisture.
