Ingredients
113g unsalted butter, softened
50g granulated sugar
50g brown sugar, packed
1 large egg yolk
1 tsp vanilla extract
120g all-purpose flour
30g cocoa powder
1/4 tsp salt
100g dark chocolate chips
60ml heavy cream
Instructions
1. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
2. Add egg yolk and vanilla; beat to combine.
3. Mix in flour, cocoa powder, and salt until dough forms.
4. Chill the dough for 30 minutes.
5. Roll into 1-inch balls and place on a baking sheet lined with parchment paper.
6. Make an indent in the center of each ball using your thumb or a teaspoon.
7. Bake at 350°F (175°C) for 10–12 minutes.
8. Repress the center gently after baking if needed.
9. Heat heavy cream until steaming, pour over chocolate chips. Let sit 1 minute.
10. Stir ganache until smooth, then spoon into each cookie center.
11. Let cookies set at room temp or chill to firm ganache.
Notes
Don’t skip the dough chilling—it helps the cookies keep their shape.
Add festive flair with crushed candy canes or colored sprinkles before the ganache sets.
