Ingredients
1/2 cup heavy cream
8 ounces high-quality dark chocolate, finely chopped
2 tablespoons unsalted butter
1 teaspoon vanilla extract (optional)
Assorted toppings: cocoa powder, chopped nuts, sprinkles, melted chocolate, shredded coconut
Instructions
1. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not let it boil.
2. Pour the hot cream over the chopped chocolate and butter in a heatproof bowl. Let it sit for 1 minute.
3. Stir the mixture gently until smooth and glossy. Add vanilla or other flavorings if using.
4. Cover the bowl and refrigerate for 1–2 hours until the ganache is firm.
5. Scoop out small portions and roll them into balls with your hands. If too soft, chill the ganache again briefly.
6. Roll each truffle in your choice of toppings or dip in melted chocolate.
7. Chill again to set if dipped. Store in an airtight container in the refrigerator.
Notes
Use gloves when rolling to avoid melting from your hands.
Truffles can be frozen for up to 2 months if stored in an airtight container.
