Ingredients

113 g superfine almond flour

113 g powdered sugar

90 g egg whites, room temperature

70 g granulated sugar

Red gel food coloring, a few drops

Green gel food coloring, a few drops

1 tsp peppermint, vanilla, or almond extract

Filling of choice (ganache, buttercream, or jam)


Instructions

1. Sift almond flour and powdered sugar together twice. Set aside.

2. In a clean bowl, beat egg whites until frothy. Slowly add granulated sugar while beating until stiff peaks form. Add food coloring and flavor extract if using.

3. Fold in the sifted dry ingredients carefully until the batter flows like lava.

4. Pipe the batter onto lined baking sheets. Tap trays to release air bubbles. Let them rest until a skin forms (30–60 minutes).

5. Bake at 300°F (150°C) for 15–17 minutes. Let cool completely before removing from trays.

6. Pair similar-sized shells and fill with desired filling. Decorate as festive as you like!

Notes

Let macarons mature in the fridge for 24 hours after filling for best texture.

Avoid overmixing the batter during macaronage—it should slowly flow off the spatula in ribbons.
