2 tbsp powdered sugar
Green food coloring (to desired shade)
Optional star-shaped cookies for garnish
Instructions
1. In a saucepan, bring water, butter, and salt to a simmer.
2. Add flour all at once, stirring vigorously until dough forms a ball.
3. Remove from heat, let cool slightly, then beat in eggs one at a time until smooth.
4. Pipe small, medium, and large mounds on a baking sheet.
5. Bake at 400°F (200°C) for 20–25 minutes until golden and puffed.
6. Cool puffs completely before slicing.
7. Whip heavy cream with powdered sugar and green coloring until stiff peaks form.
8. Slice puffs and pipe cream between layers, stacking from largest to smallest.
9. Top with a cookie star and dust with powdered sugar.

Notes
Whip the cream just before assembly to keep it firm and fresh.
Bake the puffs ahead of time, but always fill them close to serving to retain crispness.
