Whether you’re looking for a quick dinner idea, comforting fall food, or classic home-cooked meals, this easy recipe brings together everything we love about satisfying, one-dish meals. Great for meal prep, cold weather recipes, or simply a hearty dinner idea.

Ingredients

1.5 pounds beef chuck, cut into chunks

1 tablespoon vegetable oil

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons tomato paste

3 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

1 cup diced carrots

1 cup frozen peas

1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)

Instructions

1. Heat oil in a large skillet or Dutch oven over medium-high heat. Add beef chunks in batches and brown on all sides. Set aside.

2. In the same pan, sauté onion until soft. Add garlic and tomato paste, stirring for 1 minute.

3. Sprinkle in flour and stir until it coats the mixture. Gradually add beef broth while stirring to deglaze the pan.

4. Stir in Worcestershire sauce. Return beef to the pot and simmer covered for 1.5 hours until tender.

5. Add carrots and cook for 10 more minutes. Stir in peas and cook for another 5 minutes.

6. Preheat oven to 400°F (200°C). Transfer filling to a baking dish.

7. Cover with puff pastry, seal edges, and brush with egg wash. Cut slits for venting.

8. Bake for 25-30 minutes or until crust is golden and puffed.

Notes

Keep the puff pastry chilled until just before baking to ensure maximum flakiness.

To save time, make the filling a day ahead and refrigerate. Assemble and bake when ready to serve.
