Ingredients
1 cup unsalted butter, softened
0.5 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
0.25 teaspoon salt
0.5 cup fruit jam or preserves (raspberry, strawberry, or apricot)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add egg yolk and vanilla extract, and mix until combined.
4. Gradually add flour and salt, stirring just until the dough forms.
5. Roll tablespoon-sized dough into balls and place on prepared baking sheet.
6. Press a thumbprint or use a teaspoon to make an indent in each cookie.
7. Fill each center with a small amount of jam.
8. Chill the filled cookies for 15 minutes to prevent spreading.
9. Bake for 12–14 minutes, or until edges are lightly golden.
10. Cool on a wire rack before serving or storing.
Notes
Chill the cookies before baking to help them hold their shape.
For the best texture, do not overbake—the edges should be just turning golden.
