Ingredients

1 pie crust (homemade or store-bought)

113 g unsalted butter, softened (½ cup)

400 g granulated sugar (2 cups)

3 large eggs

30 g all-purpose flour (¼ cup)

240 ml buttermilk (1 cup)

1½ tsp vanilla extract

1 tbsp lemon juice or zest

¼ tsp ground nutmeg (optional)


Instructions

1. Preheat oven to 375°F (190°C). Pre-bake the pie crust in a 9-inch pie dish for 10 minutes until lightly golden. Let cool.

2. In a large bowl, beat butter and sugar together until light and fluffy.

3. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, vanilla, and lemon juice/zest.

4. Add flour and mix until smooth and fully combined.

5. Pour filling into the cooled crust.

6. Bake at 350°F (175°C) for 45–50 minutes or until center is set and top is golden.

7. Cool completely before slicing. Serve chilled or at room temperature.

Notes

Pre-baking the crust is essential to avoid a soggy bottom.

For an extra depth of flavor, use browned butter instead of plain.
