1 pie crust (homemade or store-bought)
113 g unsalted butter, softened (½ cup)
400 g granulated sugar (2 cups)
3 large eggs
30 g all-purpose flour (¼ cup)
240 ml buttermilk (1 cup)
1½ tsp vanilla extract
1 tbsp lemon juice or zest
¼ tsp ground nutmeg (optional)
Instructions
1. Preheat oven to 375°F (190°C). Pre-bake the pie crust in a 9-inch pie dish for 10 minutes until lightly golden. Let cool.
