Description

Classic Cabbage Fritters are the kind of crispy, golden bites that make simple ingredients feel exciting again. I love how shredded cabbage, carrot, and onion come together in one easy recipe to create a quick breakfast, healthy snack, easy lunch, or simple dinner side. They are savory, tender in the middle, and perfectly crisp around the edges, making them one of my favorite budget-friendly food ideas when I want something comforting, fast, and full of texture.


Ingredients

2 cups green cabbage, finely shredded

1 medium carrot, grated

1 small onion, finely grated

2 large eggs

1/2 cup all-purpose flour

2 cloves garlic, minced

2 tablespoons chopped parsley or chives

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon paprika

3 tablespoons neutral oil, for frying


Instructions

1. Place the shredded cabbage, grated carrot, and onion in a large bowl. Sprinkle with a little of the salt, let sit for 10 minutes, then squeeze out as much excess moisture as possible.

2. Add the eggs, flour, garlic, parsley or chives, remaining salt, black pepper, and paprika. Mix until everything is evenly combined.

3. Heat 1 to 2 tablespoons of oil in a large skillet over medium heat.

4. Scoop about 1/4 cup of the mixture for each fritter into the skillet, then flatten gently with the back of a spoon.

5. Cook for 3 to 4 minutes on the first side until deeply golden and crisp.

6. Flip and cook for another 3 to 4 minutes until the second side is browned and the center is cooked through.

7. Transfer the fritters to a paper towel-lined plate and repeat with the remaining mixture, adding more oil as needed.

8. Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.

Notes

Squeezing out the cabbage well is the secret to fritters that crisp up beautifully instead of turning soggy.

Keep the fritters fairly thin in the pan so they cook through evenly and get those delicious lacy edges.
