Ingredients

1 pint cherry tomatoes (mixed red and yellow)

8 oz fresh mozzarella balls (bocconcini or ciliegine)

Fresh basil leaves (a generous handful)

3 tbsp extra virgin olive oil

1 tbsp balsamic glaze (optional)

Sea salt, to taste

Freshly ground black pepper, to taste


Instructions

    1. Rinse cherry tomatoes and pat them dry. Cut larger ones in half.
    2. Drain and gently dry the mozzarella balls.
    3. In a bowl or platter, mix the tomatoes and mozzarella.
    4. Tear some basil leaves and add to the mix; reserve a few whole for garnish.
    5. Drizzle with olive oil and balsamic glaze if using.
    6. Season with salt and freshly ground pepper.
    7. Optional: Let sit at room temperature for 10–15 minutes for flavors to meld.
    8. Garnish with whole basil leaves and serve fresh.
