Description

This classic chicken salad is creamy, refreshing, and packed with flavor. Made with tender chicken, crisp vegetables, and a tangy dressing, it’s perfect for sandwiches, wraps, or serving with crackers. Ideal for meal prep, it stays fresh and delicious for days.


Ingredients

2 cups cooked chicken, diced or shredded

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1/2 cup celery, finely chopped

1/2 cup red bell pepper, diced

2 tablespoons red onion, finely chopped (optional)

1 tablespoon fresh parsley, chopped

1 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 cup sliced almonds or walnuts (optional)

1/4 cup dried cranberries or grapes, halved (optional)


Instructions

  1. Prepare the Chicken – Cook and cool the chicken before dicing or shredding it. Rotisserie chicken can also be used.
  2. Chop the Vegetables – Dice the celery, bell pepper, and red onion. Chop the parsley finely.
  3. Mix the Dressing – In a large bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, black pepper, and garlic powder.
  4. Combine Everything – Add the diced chicken, chopped vegetables, and optional ingredients to the dressing. Stir until well coated.
  5. Chill and Serve – Refrigerate for at least 20–30 minutes before serving. Enjoy in a sandwich, with crackers, or over a salad.
