Ingredients
1.5 lbs chicken breasts or thighs
1 tablespoon olive oil
1 small yellow onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 tablespoon curry powder
1 teaspoon paprika
0.5 teaspoon ground cumin
1 teaspoon salt
0.5 teaspoon black pepper
1 can (13.5 oz) full-fat coconut milk
2 tablespoons fresh cilantro, chopped
Instructions
1. Pat chicken dry and season with salt and pepper.
2. In a large skillet, heat oil over medium and sear chicken 4–5 minutes per side. Remove and set aside.
