Ingredients

1 ¾ cups all-purpose flour

¾ cup unsalted butter, softened

½ cup granulated sugar

¼ cup brown sugar

1 tablespoon instant espresso powder

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon salt

1 large egg

1 cup powdered sugar

2 tablespoons brewed coffee


Instructions

1. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

2. Add the egg, vanilla extract, and espresso powder. Mix until combined.

3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture and stir to form dough.

4. Chill dough for at least 30 minutes.

5. Preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet and bake 10–12 minutes.

6. Let cookies cool on the baking sheet.

7. Mix powdered sugar and brewed coffee to form glaze. Drizzle over cooled cookies.

8. Let glaze set before serving or storing.
