Ingredients

1 lb ground Italian sausage

4 cups Yukon Gold potatoes, diced

1 cup carrots, chopped

1 cup celery, chopped

1 small onion, diced

3 cloves garlic, minced

1/2 cup wild rice, uncooked

4 cups chicken broth

1 cup heavy cream

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1 tbsp fresh thyme, chopped

1 tbsp fresh parsley, chopped


Instructions

1. In a large Dutch oven or soup pot, cook the sausage over medium-high heat until browned and crumbled. Transfer to a plate and set aside.

2. In the same pot, sauté onion, garlic, carrots, and celery in the sausage drippings until softened.

3. Add potatoes, wild rice, salt, pepper, and paprika. Pour in chicken broth and bring to a boil.

4. Reduce heat and simmer uncovered for 20–25 minutes until potatoes are tender.

5. Return the sausage to the pot and stir in heavy cream. Simmer for 10 minutes more.

6. Add fresh thyme and parsley. Adjust seasoning if needed. Serve hot with bread.

Notes

Let the soup rest 10 minutes before serving for a thicker consistency.

Swap wild rice for orzo or barley for a twist.
