Ingredients
2 cups cooked corned beef, diced or shredded
2 medium Yukon Gold potatoes, peeled and diced
1 small red onion, diced
1 small red bell pepper, diced (optional)
2 tablespoons butter or olive oil
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Parboil the diced potatoes for 5-6 minutes until just fork-tender. Drain and pat dry.
2. In a large skillet, melt butter or heat oil over medium heat. Add diced onion and bell pepper. Sauté for 5 minutes until soft and golden.
3. Add potatoes in an even layer. Let them cook undisturbed for 4-5 minutes to form a golden crust. Stir and cook until browned on all sides.
4. Stir in the corned beef and continue cooking for another 5-7 minutes, allowing it to crisp up.
5. Season with salt and pepper. Sprinkle with parsley and serve hot. Optionally, top with a fried egg.
Notes
Make sure the potatoes are completely dry before frying to maximize crispiness.
For extra texture, press the hash slightly in the pan and let it sit undisturbed before flipping.
