Ingredients
450g boneless skinless chicken thighs or breasts
85g unsalted butter
3 cloves garlic minced
2 tablespoons fresh parsley chopped
1 tablespoon fresh chives chopped
1 teaspoon fresh thyme chopped
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon red pepper flakes
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Cut chicken into 1.5-inch chunks and pat dry.
2. In a saucepan, melt butter. Stir in garlic, lemon juice and zest, pepper flakes, paprika, herbs, salt, and pepper. Cook 2-3 minutes.
3. Pour half the cowboy butter over the chicken and add olive oil. Mix to coat and marinate for 30 minutes to 2 hours.
4. Thread marinated chicken onto skewers.
5. Grill on medium-high heat for 10-12 minutes, turning to brown evenly.
6. Brush with remaining cowboy butter before serving.
