Ingredients

12 baby potatoes

2 ears of corn (cut into 2-inch chunks)

1 large zucchini (cut into thick slices)

14 oz smoked kielbasa (cut into chunks)

1/2 cup unsalted butter

3 cloves garlic (minced)

1 tablespoon Dijon mustard

2 tablespoons lemon juice

2 tablespoons chopped fresh parsley

1/4 teaspoon cayenne pepper

Salt and black pepper (to taste)


Instructions

1. Boil baby potatoes in salted water for about 10 minutes until just fork-tender. Drain and let cool slightly.

2. Slice zucchini and kielbasa, and cut corn into thick rounds.

3. In a small saucepan, melt butter and stir in garlic, Dijon mustard, lemon juice, parsley, cayenne, salt, and pepper. Set aside.

4. Thread skewers with a mix of potatoes, kielbasa, corn, and zucchini in alternating patterns.

5. Brush generously with cowboy butter.

6. Grill over medium heat for 10–15 minutes, turning often and basting with more butter.

7. Serve immediately with remaining butter and lemon wedges on the side.

Notes

Parboiling the potatoes first ensures they cook through evenly on the grill.

Adjust the cayenne to make the cowboy butter more or less spicy, based on your heat preference.
