Description

Cowboy Butter Smashed Beef Tortilla Melts are the kind of easy dinner that gets everyone to the table fast. Crispy golden tortillas, juicy seasoned ground beef, plenty of melted cheddar and Monterey Jack, and a buttery garlic-herb finish come together in one seriously crave-worthy meal. This is one of my favorite comfort food recipes for a quick dinner, easy lunch, weeknight meal, game day snack, or fun family dinner idea when I want something cheesy, hearty, and packed with flavor.


Ingredients

1 pound ground beef

4 large flour tortillas

1 1/2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 tablespoons butter, softened

2 cloves garlic, minced

1 tablespoon chopped parsley

1 tablespoon chopped chives

1 teaspoon Dijon mustard

1 teaspoon lemon juice

1 teaspoon Worcestershire sauce

1/2 teaspoon paprika

1/2 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter for the skillet


Instructions

1. In a small bowl, mix the softened butter, minced garlic, parsley, chives, Dijon mustard, lemon juice, paprika, onion powder, crushed red pepper flakes, salt, and black pepper until well combined.

2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles as it cooks. Drain excess grease if needed.

3. Stir Worcestershire sauce and 1 tablespoon of the cowboy butter mixture into the cooked beef. Remove from heat.

4. Lay the tortillas flat on a clean surface. Sprinkle cheddar and Monterey Jack over one half of each tortilla.

5. Divide the beef mixture evenly over the cheese, then top with the remaining cheese. Fold each tortilla over into a half-moon shape and press gently.

6. Heat 1 tablespoon butter in a skillet over medium heat. Cook the tortilla melts for 2 to 3 minutes per side, until golden brown and crisp and the cheese is melted. Work in batches if needed.

7. Brush the hot tortilla melts with the remaining cowboy butter. Let them rest for 1 minute, then slice into wedges and serve warm.

Notes

Use freshly shredded cheese if you can, because it melts smoother and gives the filling a better texture.

Cook the tortilla melts over medium heat instead of high so the outside gets crisp without burning before the cheese fully melts.
