Ingredients

1.5 lb sirloin steak, cubed

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

4 tbsp unsalted butter

4 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tbsp lemon juice

1 tsp Dijon mustard

1/4 tsp crushed red pepper flakes

1/2 tsp smoked paprika


Instructions

1. Cut the steak into bite-sized cubes and pat dry. Season with salt and pepper. Let sit at room temperature for 15 minutes.

2. Heat a cast-iron skillet with oil over medium-high heat. Sear steak in batches for 2–3 minutes per side until browned. Set aside.

3. In the same skillet, lower heat to medium and melt butter. Add garlic and cook until fragrant.

4. Stir in lemon juice, Dijon mustard, red pepper flakes, smoked paprika, and parsley. Let it simmer for 1 minute.

5. Return steak bites to skillet and toss to coat with cowboy butter sauce.

6. Cook another 1–2 minutes to heat through. Serve hot.
