2 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 stalk celery, finely chopped
1 small carrot, finely grated
2 tablespoons all-purpose flour
1/2 cup dry white wine
2 cups seafood stock (or chicken stock)
1 cup heavy cream
1/2 cup whole milk
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Salt and pepper to taste
1/2 lb cooked lump crab meat
1/2 lb shrimp, peeled, deveined, chopped
1 tablespoon tomato paste
1 teaspoon fresh thyme (or 1/2 tsp dried)
1 bay leaf
Fresh chives or parsley, chopped
Lemon wedges for serving (optional)

In a large pot, melt butter with olive oil over medium heat. Add onion, garlic, celery, and carrot. Sauté until vegetables are soft (about 5–7 minutes).
