Ingredients
For the Chicken:
4 cups chicken broth
1 1/2 lbs boneless skinless chicken breasts
Salt and pepper to taste
For the Dumplings:
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/4 cup cold butter, cubed
3/4 cup whole milk
To Finish the Dish:
Extra salt & black pepper
Fresh thyme (optional garnish)
Instructions
- In a large pot, bring the chicken broth to a simmer. Add chicken breasts, season with salt and pepper, and cook until done (about 20 minutes).
- Remove chicken, shred with forks, and set aside. Keep broth simmering.
- In a bowl, combine flour, baking powder, and salt. Cut in cold butter until mixture is crumbly.
- Stir in milk to form a soft dough.
- Roll out dough to 1/8-inch thickness and cut into strips (1” x 2”).
- Drop dumplings one by one into the simmering broth, stirring gently.
- Simmer for 15-20 minutes until dumplings are cooked through.
- Return shredded chicken to pot and cook for another 5 minutes.
- Adjust seasoning and garnish with thyme if desired. Serve hot.
