Ingredients

12 oz penne or pasta of choice

1 tbsp olive oil

2 boneless, skinless chicken breasts (cubed or sliced)

Salt and pepper to taste

4 garlic cloves, minced

8 oz cream cheese, softened

1 cup chicken broth

1 cup heavy cream

1 cup shredded mozzarella or parmesan cheese

6 slices bacon, cooked and crumbled

1 tsp Italian seasoning

Optional: fresh parsley for garnish


Instructions

  1. Boil salted water and cook the pasta until al dente. Drain and set aside. Reserve 1/2 cup pasta water.
  2. In a skillet, cook bacon until crispy. Drain on paper towels and chop.
  3. Remove excess grease, keeping 1 tbsp in the skillet. Cook chicken with olive oil, salt, pepper, and Italian seasoning until browned and cooked through. Set aside.
  4. Add garlic to the skillet and sauté briefly. Add cream cheese, chicken broth, and heavy cream. Stir until smooth.
  5. Mix in shredded cheese and stir until melted.
  6. Return cooked chicken to the sauce and toss with pasta.
  7. If needed, add a bit of pasta water to loosen the sauce.
  8. Top with crispy bacon and parsley. Serve hot.
