Ingredients
2 cups grated carrots
8 oz cream cheese, softened
3/4 cup brown sugar
3/4 cup granulated sugar
2 large eggs
1/2 cup vegetable oil
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. In a bowl, mix cream cheese, 1/4 cup sugar, 1 egg, and 1/2 tsp vanilla until smooth. Set aside.
2. In a large bowl, whisk 2 eggs, brown sugar, 1/2 cup sugar, oil, and 1/2 tsp vanilla until combined.
3. Stir in grated carrots.
4. In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
5. Fold dry ingredients into wet until just combined.
6. Pour half of batter into greased loaf pan. Spread cream cheese mixture over it.
7. Top with remaining batter and smooth the top.
8. Bake at 350°F for 55–65 minutes or until a toothpick (from the cake part) comes out clean.
9. Let cool 15 minutes in pan, then transfer to a wire rack.
10. Frost with cream cheese icing or glaze when completely cooled.
Notes
Be sure to let the loaf cool completely before slicing to avoid cream cheese center collapse.
You can swirl the cream cheese layer slightly with a knife for a marbled effect.
