Ingredients

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

8 ounces rotini pasta

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley


Instructions

1. Pat the chicken dry and season both sides with Cajun seasoning. Let rest for 10 minutes.

2. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.

3. Cook rotini in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.

4. In the same skillet, lower heat to medium. Add butter and garlic; sauté for 30 seconds.

5. Stir in heavy cream, bring to a gentle simmer.

6. Add mozzarella and Parmesan, stir until fully melted and smooth. Season with salt and pepper.

7. Slice cooked chicken. Add pasta to sauce, thin with reserved pasta water if needed.

8. Top with chicken, garnish with parsley, and serve hot.

Notes

For extra flavor, add a splash of lemon juice to brighten the creamy sauce.

If reheating leftovers, stir in a little cream or milk to bring the sauce back to life.
