Ingredients

1 lb sirloin steak, cut into bite-sized pieces

10 oz cheese tortellini (refrigerated or fresh)

1 small onion, diced

2 cloves garlic, minced

1 cup beef broth

4 oz cream cheese

1/2 cup heavy cream

4 slices provolone cheese

1 tbsp olive oil

1 tbsp butter

1 tsp Italian seasoning

1/2 tsp black pepper

2 tbsp chopped fresh parsley (optional garnish)


Instructions

1. Heat olive oil and butter in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 2–3 minutes per side until browned. Remove and set aside.

2. In the same skillet, reduce heat. Add onions and sauté until soft. Stir in garlic and cook for 30 seconds.

3. Pour in beef broth to deglaze the pan. Stir in cream cheese and heavy cream, whisking until smooth. Add provolone and melt completely. Season with Italian seasoning and pepper.

4. Fold in tortellini and simmer for 4–5 minutes until tender and coated. Return steak to the pan and stir to combine.

5. Garnish with parsley and serve warm with extra cheese if desired.

Notes

For extra richness, add a splash of white wine during the deglazing step.

Don’t overcook the tortellini—taste it after 4 minutes to ensure perfect texture.
