Ingredients

2 tablespoons butter

1 small onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

6 cups chicken broth

1 cup long grain white rice

3 cups cooked shredded chicken

1 cup heavy cream

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Melt the butter in a large pot or Dutch oven over medium heat.

2. Add the onion, carrots, and celery, and cook for 5 to 6 minutes until softened.

3. Stir in the garlic and cook for 30 seconds.

4. Pour in the chicken broth and stir in the rice, Italian seasoning, salt, and black pepper.

5. Bring the soup to a gentle boil, then reduce the heat and simmer for 18 to 20 minutes, stirring occasionally, until the rice is tender.

6. Add the shredded chicken and cook for 3 to 4 minutes until heated through.

7. Reduce the heat to low and stir in the heavy cream.

8. Simmer gently for 2 to 3 minutes without boiling.

9. Stir in the parsley and serve hot.

Notes

Use cooked rotisserie chicken for an even faster dinner and extra flavor.

If the soup thickens too much after sitting, stir in a splash of broth or milk when reheating.
