Ingredients

1 lb white fish fillets (cod, halibut, or haddock)

1 tablespoon olive oil

1 medium onion, chopped

3 garlic cloves, minced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 teaspoon smoked paprika

1/4 teaspoon chili flakes (optional)

1/2 teaspoon black pepper

2 cups fish stock or broth

1 can (13.5 oz) coconut milk

2 tablespoons fresh lime juice

1/4 cup chopped fresh cilantro


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until fragrant and translucent.

2. Add red and yellow bell peppers. Cook for 3–4 minutes until slightly tender.

3. Stir in smoked paprika, black pepper, and chili flakes. Cook for another minute.

4. Pour in fish stock and coconut milk. Stir and bring to a gentle simmer.

5. Add white fish chunks. Simmer for 7–10 minutes until fish is opaque and flakes easily.

6. Squeeze in fresh lime juice and sprinkle with chopped cilantro before serving.

Notes
