Ingredients

2 boneless, skinless chicken breasts

8 oz cream cheese, cubed

1 cup shredded cheddar cheese

1 can (10 oz) diced tomatoes with green chiles (like Rotel)

1 packet taco seasoning

1 bag tortilla chips

1/2 cup sour cream (for topping)

1/4 cup diced tomatoes (for topping)

2 tablespoons fresh chopped cilantro (for topping)


Instructions

1. Place chicken breasts in the bottom of the crockpot.

2. Sprinkle taco seasoning over the chicken.

3. Add the can of diced tomatoes with green chiles.

4. Top with cubed cream cheese.

5. Cover and cook on low for 6 hours or high for 3–4 hours.

6. Shred chicken in the crockpot and stir until well combined with the creamy sauce.
