Ingredients

4 salmon fillets (skin on or off)

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic, minced

1 small shallot, finely chopped

¼ cup sun-dried tomatoes, chopped

1 teaspoon dried thyme or Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

½ cup chicken or vegetable broth

½ cup heavy cream

¼ cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (plus more for garnish)

Juice of ½ lemon


Instructions

  1. Pat salmon dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon for 4 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter. Add garlic and shallots; sauté for 1-2 minutes.
  4. Add sun-dried tomatoes, herbs, and red pepper flakes. Stir for a minute.
  5. Pour in broth to deglaze. Simmer for 2-3 minutes.
  6. Stir in cream and Parmesan; let it thicken for 3-4 minutes.
  7. Return salmon to pan. Spoon sauce over top and simmer 2-3 minutes.
  8. Finish with lemon juice and parsley. Serve hot with mashed potatoes, rice, or bread.
