Ingredients
4 boneless skinless chicken breasts (about 6 oz each)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried oregano (or Italian seasoning)
2 tablespoons olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup low-sodium chicken broth
1 cup freshly grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh parsley
12 ounces spaghetti
1 cup shredded mozzarella cheese
1/4 cup reserved pasta water (optional)
Instructions
1. Season the chicken. Pat chicken dry; season both sides with salt, pepper, and oregano.
2. Sear. Heat olive oil and butter in a large skillet over medium-high. Sear chicken 4-5 minutes per side until golden and cooked through (165 F). Transfer to a plate.
