Ingredients
1 1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
3/4 tsp kosher salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika (optional)
2 tbsp unsalted butter
6 cloves garlic, finely minced
1 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1 tsp Italian seasoning (optional)
1 tsp lemon juice (optional)
2 tbsp chopped fresh parsley, for garnish
Instructions
1. Marinate chicken with olive oil, salt, pepper, garlic powder, and paprika 10-15 minutes.
2. Grill over medium-high, 3-4 minutes per side, to 165 F; tent with foil.
3. Melt butter in a skillet; saute garlic 30-60 seconds.
4. Stir in broth; simmer 2 minutes. Add cream, Parmesan, and Italian seasoning; simmer 3-5 minutes to thicken.
5. Return chicken and juices; simmer 1-2 minutes. Stir in lemon juice; season to taste.
6. Garnish with parsley and serve over pasta, rice, or veggies.
Notes
Lighten it up: replace 1/4 cup cream with whole milk and simmer longer.
Gluten-free: use certified GF broth and serve with rice or potatoes.
