Ingredients

1 1/2 cups Arborio rice

12 oz mixed mushrooms (cremini, shiitake, or button), sliced

1 small onion or 2 shallots, finely diced

2 cloves garlic, minced

1/2 cup dry white wine

4 cups vegetable or chicken broth, kept warm

3/4 cup freshly grated Parmesan cheese

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 tablespoon fresh thyme or chopped parsley (for garnish)


Instructions

1. Warm the broth in a saucepan and keep it on low heat.

2. In a large pan, heat olive oil and sauté mushrooms until golden. Remove and set aside.

3. Add more olive oil, sauté the onion or shallots until translucent, then add garlic.

4. Stir in Arborio rice and toast for 1–2 minutes until slightly translucent on edges.

5. Pour in white wine and stir until mostly absorbed.

6. Begin adding broth one ladle at a time, stirring often. Wait until absorbed before adding more.

7. Continue until rice is al dente and creamy (about 18–20 minutes).

8. Return mushrooms to pan, stir in butter and Parmesan until melted and smooth.

9. Season with salt and pepper to taste.

10. Garnish with fresh herbs and serve immediately.

Notes

Always use warm broth—cold liquid will halt the cooking process.

For extra depth, stir in a splash of truffle oil or a bit of rehydrated dried porcini mushrooms.
