Ingredients

2 large chicken breasts, halved lengthwise

1 cup grated parmesan cheese

1 cup panko bread crumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt, to taste

Black pepper, to taste

3 tablespoons butter

2 tablespoons olive oil

4 garlic cloves, minced

1 cup heavy cream

1/4 cup additional grated parmesan for sauce

Fresh parsley, chopped (optional)


Instructions

1. Slice chicken breasts in half lengthwise to create thinner cutlets. Season with salt, pepper, paprika, and garlic powder.

2. Dredge each piece in flour, then dip into beaten eggs, then press into a mixture of parmesan and panko until well coated.

3. Heat butter and olive oil in a skillet over medium heat. Sear chicken 4–5 minutes per side until golden brown and cooked through. Remove and set aside.

4. In the same skillet, add minced garlic and more butter if needed. Cook until fragrant.

5. Pour in heavy cream, stir in the extra parmesan, and let simmer until thickened.

6. Return chicken to skillet or pour sauce over plated chicken. Garnish with parsley. Serve hot.

Notes

Make sure the skillet isn’t too hot or the crust may burn before the chicken cooks through.

Let the sauce simmer slowly to thicken naturally without curdling.
