Ingredients
4 large russet potatoes, peeled and diced
1 medium yellow onion, diced
2 carrots, peeled and chopped
2 celery stalks, chopped
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
4 tablespoons butter
1 ½ cups shredded cheddar cheese
6 slices cooked bacon, crumbled
1 teaspoon salt
½ teaspoon black pepper
Chopped parsley or chives for garnish (optional)
Instructions
1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
2. Add garlic and cook for another 1 minute until fragrant.
3. Stir in potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
4. Blend half the soup using an immersion blender, or transfer some to a blender and return it to the pot.
