Ingredients

1 lb ground beef (or sausage for extra flavor)

1 (10 oz) can Rotel diced tomatoes & green chilies (undrained)

16 oz Velveeta cheese, cubed

½ tsp garlic powder

½ tsp onion powder

½ tsp chili powder (optional for extra spice)

¼ cup milk (for a creamier texture, optional)

Fresh cilantro and diced tomatoes for garnish (optional)

Tortilla chips for serving


Instructions

  1. Cook the Meat – In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula. Drain any excess grease.
  2. Add Rotel and Spices – Stir in the Rotel diced tomatoes (with liquid), garlic powder, onion powder, and chili powder. Simmer for 2-3 minutes.
  3. Melt the Cheese – Reduce heat to low and add the cubed Velveeta cheese. Stir continuously until fully melted and smooth. If needed, add ¼ cup of milk for a thinner consistency.
  4. Serve Warm – Transfer to a serving bowl or keep warm in a slow cooker. Garnish with cilantro and diced tomatoes. Serve immediately with tortilla chips.
