Ingredients
1 pound steak (sirloin, ribeye, or New York strip), cut into bite-size pieces
8 ounces penne or rigatoni pasta
1 tablespoon olive oil
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped parsley (optional)
Instructions
1. Heat olive oil and butter in a large skillet over medium-high heat.
2. Season steak bites with salt and pepper, then sear for 2–3 minutes per side until browned. Remove and set aside.
3. Cook pasta according to package directions; reserve 1/2 cup of the pasta water before draining.
4. In the same skillet, add garlic and cook until fragrant.
5. Stir in heavy cream and bring to a low simmer.
6. Add Parmesan cheese and stir until melted and smooth.
7. Toss in cooked pasta, adding pasta water as needed to loosen sauce.
8. Return steak bites to the skillet and toss to coat.
9. Garnish with parsley and serve hot.
Notes
Use freshly grated Parmesan for the creamiest sauce.
Don’t overcook the steak—medium-rare to medium keeps it tender and juicy.
