Ingredients

1 tablespoon olive oil

1 tablespoon butter

2 large chicken breasts

0.5 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon Italian seasoning

0.5 medium onion, diced

3 cloves garlic, minced

0.33 cup sun-dried tomatoes, chopped

1 cup orzo pasta

2 cups chicken broth

0.5 cup heavy cream

1.5 cups fresh spinach

0.5 cup grated Parmesan cheese


Instructions

1. Heat olive oil and butter in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Sear for 4-5 minutes per side until golden and cooked through. Remove and set aside.

2. In the same skillet, sauté diced onions until soft. Add garlic and sun-dried tomatoes, cooking for 2 minutes.

3. Stir in orzo and toast for 1 minute. Pour in chicken broth and bring to a simmer. Cook for 8-10 minutes, stirring often, until orzo is tender.

4. Lower the heat. Stir in heavy cream and Parmesan cheese until creamy and melted. Add spinach and let it wilt.

5. Slice the cooked chicken and return to the skillet. Simmer for a couple more minutes to blend flavors. Adjust seasoning and serve warm.

Notes

For extra flavor, sear the chicken in the same pan you use to cook the orzo—those brown bits build deep flavor.
