Description

Looking for a cozy, creamy dinner that’s ridiculously easy and family-approved? This Creamy Velveeta Chicken Rotini Pasta with mozzarella garlic cheese sauce is the ultimate cheesy comfort food. Made with tender rotini spirals, juicy chicken, and two dreamy cheeses, it’s perfect for those craving quick weeknight meals, hearty food ideas, or just something delicious and easy. Whether you’re after an easy dinner, a new pasta recipe to love, or comforting meal inspiration, this dish ticks all the boxes—creamy, cheesy, and oh-so-satisfying.

Ingredients

8 oz rotini pasta

2 tablespoons butter

2 cloves garlic, minced

1 pound chicken breast, diced

2 tablespoons all-purpose flour

2 cups milk

1 ½ cups Velveeta cheese, cubed

1 cup mozzarella cheese, shredded

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)

Instructions

1. Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and set aside.

2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute.

3. Add diced chicken and cook until golden and fully cooked through, about 6–8 minutes.

4. Sprinkle flour over chicken and stir to coat evenly.

5. Gradually whisk in milk, stirring constantly until mixture thickens, about 3 minutes.

6. Reduce heat to low. Stir in Velveeta cheese until melted. Add mozzarella and stir until fully smooth.

7. Toss in the cooked rotini pasta and mix to coat with cheese sauce.

8. Season with salt and pepper to taste. Garnish with parsley and serve immediately.

Notes

For added depth, swap half the milk with chicken broth for a savory twist.

Don’t skip the al dente pasta—overcooked rotini will lose its perfect texture when mixed into the sauce.
