Ingredients
2 large chicken breasts
1 cup dill pickles (sliced and chopped)
¾ cup grated Parmesan cheese
1 cup panko breadcrumbs
1 tablespoon fresh dill (chopped)
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup mayonnaise
½ cup sour cream
2 tablespoons olive oil (or butter)
½ cup all-purpose flour
2 eggs (beaten)
Instructions
1. Pound the chicken to an even thickness of ½ inch using parchment paper or plastic wrap.
2. Prepare three dredging bowls: flour mixed with garlic and onion powder; beaten eggs; and a mixture of panko and Parmesan.
3. Coat each chicken breast in flour, then egg, then the panko-Parmesan blend.
4. Heat oil or butter in a skillet over medium heat. Fry the chicken for 4–5 minutes per side until golden brown and cooked through.
5. In a bowl, mix mayo, sour cream, chopped pickles, dill, and a pinch of garlic powder for the sauce.
