Crock Pot Cheesesteak Tortellini is the kind of easy dinner that makes a busy day feel instantly better. Ingredients
1 pound ground beef
1 small yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
3 cloves garlic, minced
2 cups beef broth
1 tablespoon Worcestershire sauce
8 ounces cream cheese, cubed
19 ounces refrigerated cheese tortellini
1 cup shredded provolone cheese
1 cup shredded mozzarella cheese
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Brown the ground beef in a skillet over medium heat, then drain any excess grease.
2. Transfer the cooked beef to the crock pot and add the onion, green bell pepper, red bell pepper, garlic, beef broth, Worcestershire sauce, salt, and black pepper.
3. Stir well, cover, and cook on low for 4 to 5 hours or on high for 2 to 3 hours.
4. About 30 minutes before serving, add the cubed cream cheese and stir until it melts into the mixture.
5. Stir in the cheese tortellini and make sure it is coated in the sauce.
6. Cover and cook for 20 to 30 minutes more, until the tortellini is tender.
7. Sprinkle in the provolone and mozzarella cheese, cover again, and let the cheese melt.
8. Garnish with fresh parsley and serve hot.
Notes
For the best texture, add the tortellini near the end so it stays tender and does not overcook in the slow cooker.
A splash of beef broth when reheating helps loosen the sauce since the tortellini will absorb some of the liquid as it sits.
