Ingredients

1 lb ground beef

1 medium onion, diced

4 cups diced potatoes (Yukon gold or russet)

3 cloves garlic, minced

3 cups beef broth

1 can (10.5 oz) condensed cream of mushroom soup

1 cup milk

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika (optional)

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)


Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess grease.
  2. Add beef to the crock pot along with diced onions, garlic, and potatoes.
  3. Pour in beef broth and add salt, pepper, and smoked paprika. Stir to combine.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  5. Stir in cream of mushroom soup and milk about 20–30 minutes before serving. Add cheese if using.
