Ingredients

2 boneless, skinless chicken breasts

1 can (10.5 oz) cream of chicken soup

1 can (10 oz) Rotel (diced tomatoes with green chilies)

1/2 cup chicken broth

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

8 oz spaghetti, broken in half

2 cups shredded cheddar cheese

4 oz cream cheese, cubed

1/2 cup milk

Fresh parsley or green onions for garnish (optional)


Instructions

  1. Place chicken in the crockpot and top with cream of chicken soup, Rotel, broth, and seasonings. Stir gently.
  2. Cover and cook on low for 6 hours or high for 3-4 hours.
  3. Remove chicken, shred, and return to the pot.
  4. Add cream cheese and cheddar; stir until melted.
  5. Stir in broken spaghetti and pour in milk. Mix to coat.
  6. Cook on high for 20–30 more minutes, stirring occasionally, until pasta is tender.
