Ingredients

4 cups diced potatoes (Yukon Gold or Russet)

2 cups diced cooked ham

1 small onion, diced

2 cloves garlic, minced

3 cups chicken broth

1 cup milk (or half and half)

1/2 cup sour cream

1/2 tsp dried thyme

1/2 tsp black pepper

1/4 tsp salt

1 tbsp olive oil or butter

Optional: 1/2 cup shredded cheddar cheese

Optional garnish: chopped parsley or green onions.


Instructions

  1. Peel and dice the potatoes. Dice the ham and chop onion and garlic.
  2. (Optional) Sauté onion and garlic in olive oil or butter until translucent.
  3. Add potatoes, ham, sautéed onion/garlic, broth, thyme, salt, and pepper to the crockpot.
  4. Cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  5. Blend partially with an immersion blender or blend a portion in a blender, then return it to the pot.
  6. Stir in milk, sour cream, and optional cheese. Heat for 15–20 minutes.
  7. Serve hot, garnished with parsley or green onions
