Ingredients

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup dark cocoa powder

2 large eggs

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup hot coffee

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

6 ounces dark chocolate, melted and slightly cooled

1/3 cup heavy cream

1 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F. Grease and line three 8-inch round cake pans with parchment paper.

2. In a large mixing bowl, whisk together the flour, sugar, dark cocoa powder, baking powder, baking soda, and salt.

3. Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until the batter is smooth and fully combined.

4. Slowly pour in the hot coffee and stir until the batter is thin and even.

5. Divide the batter evenly among the prepared pans.

6. Bake for 28 to 32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

7. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

8. To make the frosting, beat the softened butter until creamy.

9. Add the melted dark chocolate and mix until smooth.

10. Gradually beat in the powdered sugar.

11. Add the heavy cream and vanilla extract, then beat until the frosting is thick, silky, and spreadable.

12. Place one cake layer on a serving plate and spread a generous layer of frosting on top.

Notes

Use hot coffee, not lukewarm, because it helps bloom the cocoa and gives the cake its deep dark flavor.

Cool the cake layers completely before frosting so the chocolate frosting stays thick and does not melt into the layers.
