Ingredients
1 cup chopped dates
1 cup water
2 tablespoons brown sugar
1 tablespoon lemon juice
1 cup all-purpose flour
1 cup old-fashioned oats
3/4 cup brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter, melted
Instructions
1. Preheat the oven to 350°F and line or grease an 8×8-inch baking pan.
2. Add the chopped dates, water, 2 tablespoons brown sugar, and lemon juice to a saucepan over medium heat.
3. Cook, stirring often, for 8 to 10 minutes until the mixture is thick and spreadable. Let it cool slightly.
4. In a mixing bowl, stir together the flour, oats, 3/4 cup brown sugar, baking soda, and salt.
5. Pour in the melted butter and mix until crumbly.
6. Press two-thirds of the oat mixture firmly into the bottom of the prepared pan.
7. Spread the date filling evenly over the crust.
8. Sprinkle the remaining oat mixture over the top.
9. Bake for 30 to 35 minutes until lightly golden.
10. Cool completely before slicing into squares.
Notes
Let the bars cool completely before slicing so the layers hold together neatly.
For a deeper flavor, add a small pinch of cinnamon to the oat mixture or the filling.
