Ingredients

Banana Pecan Cake Layers:

2 ripe bananas, mashed

1 1/2 cups all-purpose flour

1/2 cup finely chopped pecans

1/2 cup unsalted butter, softened

3/4 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1/2 cup sour cream

1/4 cup whole milk

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Vanilla Cream Filling:

1 cup heavy cream

1/4 cup powdered sugar

1 tsp vanilla extract

4 oz cream cheese, softened

Caramel Glaze:

1/2 cup caramel sauce (store-bought or homemade)

Garnish:

Banana slices

Whole pecans


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, mix flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and both sugars until fluffy. Add eggs, vanilla, and mashed bananas. Blend well.
  4. Alternate adding the flour mix with sour cream and milk. Stir in chopped pecans.
  5. Divide batter into pans. Bake 25-30 mins or until a toothpick comes out clean. Cool completely.
  6. For filling: Whip cream to soft peaks. Add powdered sugar and vanilla, whip to stiff peaks. Fold into beaten cream cheese.
  7. Layer one cake with cream filling, top with second layer.
  8. Drizzle with warmed caramel glaze.
