Ingredients
Carrot Cake Bars:
2 cups finely grated carrots
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2/3 cup light brown sugar
2 large eggs
1/2 cup vegetable oil
1 tsp vanilla extract
1/2 cup crushed pineapple, drained
1/2 cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
1 1/2 cups powdered sugar
1 tsp vanilla extract
Chopped pecans for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
- In another bowl, beat eggs, brown sugar, oil, and vanilla. Stir in grated carrots and pineapple.
- Combine wet and dry ingredients until just mixed. Fold in nuts if using.
- Pour into pan and smooth the top. Bake for 30-35 minutes. Cool completely.
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beat until fluffy.
- Frost cooled cake and sprinkle with pecans. Chill slightly before slicing.
